You’re Gonna Love This Healthy Snack

An inspiration for this yummy treat is the (mostly) Paleo diet I’m following, and my love of the Food Network show “Chopped”, where contestants have to make something innovative and delicious out of a basket of 4, usually odd and disconnected, ingredients. I made a list of the dessert-like foods “allowed” on the Paleo diet, and this is what I concocted. Fun to make – well, really assemble – with kids, great presentation for company or to bring to a party, and the best part… well, I’ll wait until you eat it, and you let me know.

 

Ingredients:

Apples (whatever kind you like… I’m a Honey Crisp fan)

Smooth or crunchy almond butter

Unsweetened coconut chips

Cinnamon

Dark (I used 85%) chocolate, melted (a small amount goes a long way)

 

Slice the apples and take out the center core (or core the apple, then slice) – not too thin.

Spread the almond butter. Sprinkle the coconut and cinnamon. Drizzle the chocolate.

    That was creative. I expected to see a bagel or something. But than again, I’m not that familiar with the Paleo diet.

      SO easy! And, yes… the photo’s a bit deceiving. It does look like a bagel. But, that would be anti-Paleo!
